Garbanzo Bean and Tripe soup

Buseca or Garbanzo Bean and Tripe soup is one of those special tastes of Milan visitors can enjoy. There are several varieties from parts of Europe and Spanish South America.

To make the soup you will need 1 pound honeycomb tripe, 1 cup white vinegar, 7 bay leaves, 1 tablespoon red-pepper flakes, 1 tablespoon dried thyme, 1 tablespoon dried oregano, 1/4 cup olive oil, 2 onions, diced, 4 plum tomatoes, diced, 6 cloves garlic, minced, 1/4 cup chopped parsley leaves, 1 gallon beef stock, 1/2 cup dried garbanzo beans,1 c up dried white navy beans, 2 turnips, diced, 4 carrots, sliced, 1/2 head white cabbage, shredded, 1 cup long-grain rice, 12 ounces chorizo sausage, thinly sliced, 12 ounces morcilla sausage, thinly sliced, 1 cup grated queso blanco, 5 sprigs basil.

Rinse the tripe under cold running water and fill a large bowl with ice water and add vinegar. Place the tripe in the bowl and soak for 30 minutes. Remove from the water and cut into small cubes.

In a large pot combine the tripe, bay leaves, pepper flakes, thyme, oregano, 1 gallon water and the remaining vinegar. Bring to a boil over high heat and cook at a full boil for 1 hour. Drain the tripe and rinse. In another pot over a high flame, combine the oil, onions, tomatoes, garlic, parsley and remaining bay leaves and cook for 5 minutes. Add the stock, reserved tripe, garbanzo beans, white navy beans and turnips, and boil. Lower the heat and simmer for 1 hour. Add the carrots, cabbage and rice and simmer for another hour. Add the chorizo, morcilla, cheese and basil. Stir and simmer 10 minutes.

Mushroom Risotto, creamy mushroom rice

Risotto (read here other news) that favourite of Italian dishes made into a creamy classic can be served with a variety of accompaniment including meat, vegetable, or fish. This is the Mushroom Risotto.

To make you need 1 tablespoon olive oil, 3 small onions, finely chopped , 1 clove garlic, crushed , 1 teaspoonminced fresh parsley, 1 teaspoonminced celerysalt and pepper to taste ,  1/2 cupssliced fresh mushrooms, 1 cup whole milk , 1/4 cup heavy cream , 1 cup rice, 5 cups vegetable stock , 1 teaspoon butter , and 1 cupgrated Parmesan cheese.

To prepare, first heat olive oil in a large skillet over medium-high flame heat. Saute the onion and garlic in olive oil until onion is tender and the garlic is lightly browned.

Remove the garlic and add the parsley, celery, salt, and pepper and cook until the celery is tender. Next add the mushrooms and reduce the heat to low, and continue cooking until the mushrooms are soft.

Pour in the milk and cream into a saucepan and add the rice. Heat until it simmers and then stir in the vegetable stock into the rice 1 cup at a time, until it is absorbed.

After the rice has been cooked, add the butter and Parmesan cheese, and remove from heat.

Paella, Spanish delight

Paella is the dish associated with Spain. This combination of rice and seafood or meat and vegetables such as green peas is seen outside of Spain as the country’s national dish but is really a regional speciality from Valencia.

To make a paella gather 2 tablespoons of olive oil, 1 tablespoon of paprika, 2 tablespoons of oregano, salt and black pepper, 2 pounds of skinless chicken breasts cut into small pieces, 3 cloves of garlic, 1 teaspoon crushed red pepper flakes, 2 cups uncooked short-grain rice, 1 pinch saffron, 1 bay leaf, 1 quart of chicken stock, 1 Spanish onion, 1 red bell pepper, 1 pound chorizo sausage, and 1 pound deveined shrimp.

First: season chicken with olive oil, paprika, oregano, salt, and pepper. Then heat olive oil in a large skillet, add garlic, red pepper, and rice and stir for 3 minutes. Add the saffron, bay leaf, chicken stock and lemon. Lower heat and allow the mixture to simmer for about 20 minutes.

In another, skillet heat oil then add chicken and onion and cook for a few minutes; add bell pepper, sausage, and shrimp, turning the shrimp until both sides are pink. Decorate paella with shrimp. Paella is best enjoyed served warm.

Chicken Curry, a taste of India at home

Nothing says exotic like curry and one of the simplest curry dishes to make is chicken curry. The dish is traditionally Indian and is like bringing a little taste of the sub-Continent home.

The curry can be spiced according to your own taste – fiery hot or just mild enough to leave you wanting more.

Chicken curry is best served with either Jasmine or Basmati Rice or Nan, or both.

Gather together 2 cups of Basmati or Jasmine rice, 3 tablespoons of olive oil, 1 medium onion chopped, 1 clove of garlic minced, 3 tablespoons of curry powder, 1 teaspoon of paprika, 1 bay leaf, ½ teaspoon of grated ginger root, 1 tablespoon tomato paste, 2 skinless chicken breast halves cut into bite sized strips, 1 cup plain yogurt, ¾ cup coconut milk, ½ teaspoon cayenne pepper, 1 teaspoon lemon juice, and salt to taste.

In a saucepan, heat olive oil over a medium flame and sauté onion until lightly browned. Add the garlic, curry powder, paprika, bay leaf, ginger root, and salt. Stir. Add chicken, tomato paste, coconut milk, cayenne pepper, lemon juice, and yogurt. Bring to boil, turn down heat, and simmer for 25 to 30 minutes. In a separate pot, cook rice according to directions on package.

Fried Rice, simply delicious

There is nothing simpler than a meal of fried rice. It is filling, easy to prepare, and it doesn’t leave you with much to wash up afterwards.

Fried rice is the ideal one-pot meal when you’re on the go and because you can add so many ingredients, it can also be the perfect balanced dish, providing all the major food groups required at any one sitting.

This fried rice requires four cups of left-over rice, 2 tablespoons of soy sauce, 1/2 cup cooked thinly sliced chicken breast or breast loin, 1/2 cup pork fillet, thinly sliced, 1/2 cup cooked and thinly sliced beef fillet, 1 medium onion finely chopped, 1 spring onion chopped, 1/4 cup cooked green peasvegetable oil, and 1 small green pepper finely chopped.

In a large saucepan or wok, heat the vegetable oil over a low flame. Add onion, spring onion, and green pepper. Cook lightly, stirring constantly. Add pork, beef, and chicken and saute lightly while continuing to stir. Mix in rice and green peas and stir. Add soy sauce and continue to stir. Once rice is hot turn off flame. Can serve up to three persons.

Arroz con leche, a milky rice treat

Arroz con leche, or literally rice with milk, is a desert that is enjoyed in parts of South America, especially Peru, as well as Europe.

It is an exotic yet simple desert that can is easy to make. The arroz con leche can be sweetened and flavoured to taste and it is an easy desert that can be served when entertaining either for a small dinner party or just to offer a little taste of something different for your own family. This desert is also quite filling and is best eaten with a meal that does not already include rice.

All you need are two cups of uncooked white rice, three pints of cow’s milk, condensed milk, powdered cinnamon, brown sugar, a saucepan, four cinnamon sticks, and four small desert bowls or desert glasses.

Soak the uncooked rice in milk for a few hours. This can be done overnight as desired. Once soaked, in a saucepan over a low flame, boil rice in the remaining milk until nice and tender. Once rice is tender leave to cool

Stir in condensed milk and sugar to sweeten to taste. Add powdered cinnamon and place small amounts of mixture into glasses. Chill in a cool refrigerator until ready.

Cinnamon sticks can be added to the desert bowls before serving.
