Artichokes are a real interesting way to spice up any kind of meal. The interestingly shaped vegetable is really a thistle that is grown as food.

The Genovese-style artichoke is one good way to enjoy this food. To make it you will need 3 tablespoons olive oil, plus 1/4 cup, 1 pound button or Roman mushrooms, trimmed and chopped, 1 onion, diced, 4 garlic cloves, chopped, 4 slices prosciutto, chopped, 2 tablespoons chopped fresh parsley leaves, 1/2 cup grated Parmesan, 1 teaspoon salt, 1/2 teaspoon pepper, 4 fresh artichokes, trimmed and cleaned, and 2 cups white wine.

To prepare, first in a large skillet heat 3 tablespoons of olive oil over a medium high flame and add the mushrooms, onions, and garlic.

Cook them stirring often and until the mushrooms are tender and the onions gold. Place the mushrooms in a bowl and allow to cool then add the prosciutto, parsley, Parmesan, salt, and pepper and stir to combine.

Pull the artichoke leaves apart and widen the spaces. Then stuff the mushroom mixture between the leaves and place them in a pan. Add the wine and 1 cup of water and olive oil. Cover the pan and allow to simmer for 45 minutes until he artichokes are tender. Remove from the flame and serve hot.

Mushroom Risotto, creamy mushroom rice

Risotto (read here other news) that favourite of Italian dishes made into a creamy classic can be served with a variety of accompaniment including meat, vegetable, or fish. This is the Mushroom Risotto.

To make you need 1 tablespoon olive oil, 3 small onions, finely chopped , 1 clove garlic, crushed , 1 teaspoonminced fresh parsley, 1 teaspoonminced celerysalt and pepper to taste ,  1/2 cupssliced fresh mushrooms, 1 cup whole milk , 1/4 cup heavy cream , 1 cup rice, 5 cups vegetable stock , 1 teaspoon butter , and 1 cupgrated Parmesan cheese.

To prepare, first heat olive oil in a large skillet over medium-high flame heat. Saute the onion and garlic in olive oil until onion is tender and the garlic is lightly browned.

Remove the garlic and add the parsley, celery, salt, and pepper and cook until the celery is tender. Next add the mushrooms and reduce the heat to low, and continue cooking until the mushrooms are soft.

Pour in the milk and cream into a saucepan and add the rice. Heat until it simmers and then stir in the vegetable stock into the rice 1 cup at a time, until it is absorbed.

After the rice has been cooked, add the butter and Parmesan cheese, and remove from heat.

Roesti, potatoes with a twist

Roesti (read other things about roesti) or Swiss hash browns, is a traditional Swiss dish which is mainly made of potatoes and was once eaten mostly in Bern but is now served all overSwitzerland. It often is used to accompany spinach and fried eggs.

To make you will need 1 pound large baking potatoes, 1 tablespoon salt, 3 1/2 ounces smoked bacon, thinly sliced, vertically, 3 1/2 ounces onion, diced, 1 sprig thyme, 3 1/2 ounces mushrooms, diced, 2 tablespoons oil, 2 ouncesbutter, and 6 slices Gruyere.

To prepare boil the potatoes in their skins for 20 minutes, drain, and cool and peel. Use a cheese grater to grate them into a large mixing bowl and add salt. In a frying pan, sauté the bacon and onions, add the thyme leaves and mushrooms and cook until soft. Combine with the potatoes and mix being careful not to mash them too much.

Heat oil in a frying pan and add 3 or 4 spoonfuls of the mixture then use a spatula to flatten. Brown it over a high heat. When the bottom side is cooked flip it over. Repeat with remaining potato mixture. Place 1/2 tablespoon of butter and a slice of Gruyere on both sides and melt under a hot grill.

Antipasto is the quintessential Italian opener. This serves as an appetiser for dinner and can also be served when entertaining guests.

This recipe serves four and requires 2 cups chopped cauliflower, 4 cups pearl onions, 2 cups chopped red bell peppers, 2 cups chopped green bell peppers, 2 cups chopped celery, 2 cucumbers – peeled, seeded and chopped, 2 cups carrots, chopped, 2 cups vegetable oil, 1 cup black olives, 1 tablespoon pickling spice, 1 cup pitted green olives, 4 cups mushrooms, 2 cups distilled white vinegar, 1 can tomato paste, and 1 1/2 cans flaked tuna.

To prepare first soak cauliflower, carrots, pearl onions, red bell peppers, green bell peppers, celery and cucumbers in lightly salted water overnight. In another bowl boil vegetable oil, vinegar, carrots, tomato paste and pickling spice for 10 minutes.

Cook vegetables and cauliflower in water until cauliflower is tender and crisp. Add black olives, green olives, mushrooms and tuna to the mixture. When cooked remove from heat and refrigerate. When chilled, arrange on a platter and serve.

Arancini, meaty rice balls

Arancini is an Italian dish said to have originated in Sicily and is typically served in the Sicilian port city of Messina.

The meal is fried, stuffed, rice balls which are coated with breadcrumbs and filled with meat saucetomato saucemozzarella cheese, and peas. Some other variations also include mushroomspistachios or eggplant.

The ingredients include vegetable oil, 2 large eggs, beaten, 2 cups Risotto with mushroom and peas, ½ cup parmesan, grated, 1 ½ cups bread crumbs, salt, and 2 ounces mozzarella, cubed.

For the rice mixture all that is needed is 500g of risotto, chicken or beef stock, 1 tablespoon of butter, 1 medium egg and ¾ cup Parmesan.

To make the risotto melt butter in a large pan add rice and fry for a few minutes. Add stock and stir into the rice until cooked. Leave to cool at room temperature.

Then combine eggs, risotto, parmesan, and bread crumbs. Fold mixture into balls and coat with remaining bread crumbs. Place one mozzarella cube in the centre of each ball.

Add oil to a large saucepan and heat over medium flame, add balls and fry until golden brown. Add salt to taste.

Breakfast is said to be the most important meal of the day but for many persons it is often nothing more than a slice of toast, orange juice, or cereal and milk. The traditional English breakfast is a deviation from that.

The meal is extremely popular in the United Kingdom and Ireland appeals to middle and upper classes and is designed to keep you full.

The breakfast is considered a staple of English cuisine and is served in hotels, airports, and restaurants during the week or weekends at bed and breakfasts and is also often served in pubs as an all-day breakfast.

Breakfast suggests early morning but the meal is also popular at other times of the day.

The breakfast consists of grilled sausages, bacon, tomatoes, eggs which can be done in a variety of ways including poached, scrambled or fried, baked beans, bread, and hash browns. Some recipes include black pudding.

Start by grilling or frying the sausages. While the sausages are being prepared put the bacon and tomatoes on the grill cooking at medium heat. The tomatoes should be cut lengthways and sprinkled with salt.

Cook mushrooms in a separate pan in chicken stock for 10-15 minutes. Leave the eggs until last. Leave the other items in a warm oven in the meantime.

Arrange everything on a plate. Serve and eat. The breakfast can be taken with a cup of tea or coffee.
