The Torta Rustica is an easy Cuban, Greek, or Italian dish that can be eaten for breakfast or lunch. The dish which is a complete meal consisting of carbohydrates, vegetables, and food from animals, is a fairly heavy meal and best eaten before late hours.

Gather together 2 1/4 cups all-purpose flour, 3/4 cup cornmeal, 1/2 teaspoon salt, 3/4 cup butter, diced 2 eggs, 4 tablespoons cold water, 1 1/2 cups ricotta cheese, 4 ounces feta cheese, 1 cup grated Parmesan cheese, 1 egg 1/4 cup chopped parsley, 2 tablespoons chopped fresh basil, 2 teaspoons chopped fresh oregano, 2 cups shredded mozzarella cheese, 1/2 pound ham slices, chopped frozen chopped spinach, roasted red peppers, and 1 egg.

To prepare add flour, cornmeal, and salt and cut in butter until the mixture resembles coarse bread crumbs. Beat in eggs and cold water and mix it into the flour mixture until the dough forms. Shape2/3 of the mixture into a flattened round and repeat the process with the remaining 1/3 and place in the refrigerator.

In a separate bowl, mix the cheese, 1 egg, parsley, basil, and oregano until blended. In an 8 inch round baking dish rollout the dough mixture and place the flattened portion in the bottom of the pan. Use the remaining 1/3 to wrap in the round section of the dish and add the cheese mixture. Add the peppers in single layer and top with the mozzarella and press down. Cover with the remaining dough and seal the edges. Use the remaining egg to top the mixture and bake in an oven at 375 degrees F or until the crust is golden brown. Once done, cool, cut into wedges and serve.

Chicken with Eggplant and Basil

Chicken is one of the most versatile meats you can buy. It goes with just about everything and most dishes are so simple and easy to prepare. The Chicken with Eggplant and Basil is one such dish.

This dish requires 4 tablespoons extra-virgin olive oil, 1 baby eggplant cut in half, salt, 1 tablespoon pine nuts, 4 thin chicken cutlets, Freshly ground pepper, All-purpose flour, cloves garlic, chopped, 1/4 cup sun-dried tomatoes packed in oil, drained, rinsed and chopped, 1/4 cup fresh basil leaves, 1/2 cup chicken broth, 1/4 cup ricotta cheese, and bread.

To prepare, first season the chicken with salt and pepper and roll in the flour. After shaking off the excess put aside. Next drizzle a little olive oil over the eggplants and add salt; place in an oven and cook for a few minutes. Toast the pine nuts over a saucepan over a high flame and then place in a bowl and drizzle the remaining olive oil.

Place the chicken in a saucepan and brown for a few minutes add the garlic and cook a few more minutes. Slice the eggplant into chunks and add tomatoes, eggplant, basil, nuts, and broth to cooking chicken. Simmer. Allow to cook and top with ricotta cheese and eggplant. Serve with bread.

Pork Marsala with Spinach, sweet pork

There’s nothing tastier than warm succulent pork (read here other news) and with a hint of fresh herbs and Marsala wine it can be the perfect meal for a fine dinner. Pork Marsala with Spinach is one of those fine dishes.

To make you will need 1 ½ pounds of boneless pork roastsaltground pepper, 3 tablespoons all-purpose flour, 2 tablespoons extra-virgin olive oil, 1 ½ pounds of white mushroomschicken broth, ½ dry Marsala wine, 1/3 cup heavy cream, 4 teaspoons lemon juice, ½ parsley leaves, and 1 pound spinach.

To prepare you will need to preheat the oven to 375 degrees F. Next halve the pork horizontally and then open it out so that it lies flat; Season with pepper and salt, and sprinkle with flour.

Next, in a skillet, heat olive oil over a medium flame and brown on either side. Place in a baking dish and bake for 15 to 20 minutes.

Place mushrooms and salt in a skillet and cook until brown. Use the remaining flour and cook for about a minute. Add the broth and Marsala and boil. Add the cream and continue to boil until the sauce thickens. Turn off the heat and add lemon juice and parsley.

Cook the remaining spinach using the remaining oil and add lemon juice an season. Slice the pork and serve with mushroom and spinach.

Chicken parmesan

Cheese, especially parmesan cheese (read here other news) adds a little touch of flavor to just about every meal. It spices up chicken, beef, or pork.

To make chicken parmesan, you need 4 skinless, boneless chicken breasts, salt, black pepper, 2 eggs, 4 cups bread crumbs, 3/4 cup grated Parmesan cheese, 2 tablespoons all-purpose flour, 1 cup olive oil, 1/2 cup tomato sauce, 1/4 cup fresh mozzarella, cut into cubes, 1/4 cup chopped fresh basil, 1/2 cup grated provolone cheese, and 1 tablespoon olive oil.

Preheat oven to 450 degrees F. Put chicken breasts between two sheets of heavy plastic on a solid, level surface. Firmly pound the chicken with the smooth side of a meat mallet to pieces ½ inch thick; season with salt and pepper. Next beat eggs and set aside. Then mix bread crumbs and 1/2 cup Parmesan in a separate bowl and set aside. Sift flour and sprinkle over chicken breasts, evenly coating both sides. Dip in beaten eggs and transfer to breadcrumb mixture, pressing the crumbs into both sides.

Repeat for each breast and set aside for about 15 minutes. Heat olive oil in a large skillet over a medium flame and cook chicken until golden for about 2 minutes on either side.

Place chicken in a baking dish and top with about 1/3 cup of tomato sauce. Then layer each breast with mozzarella, basil, and provolone. Sprinkle about 2 tablespoons of Parmesan cheese and drizzle with 1 tablespoon olive oil.

Bake in the preheated oven until cheese is browned and bubbly, and chicken breasts are no longer pink in the center, 15 to 20 minutes.

Shepherd’s Pie, hearty filling food

Whether you call it a Shepherd’s Pie or a Cottage Pie, if a down-home hearty meal is what you’re searching for then this dish is the tasty, filling, traditional choice.

Shepherd’s Pie is an English or Irish dish traditionally made with mashed potatoes, mutton or lamb but is now most often made with minced beef. It can be topped with cheddar cheese for an extra zingy flavour.

The ingredients include two pounds of potatoes, 1 tablespoon of vegetable oil, garlic, salt, grounded pepper, dried thyme, ¼ all-purpose flour, 2 pounds ground beef, 1 ½ cups shredded cheddar cheese, 1 cup of whole milk, 1 large onion chopped, tomato paste, ½ cup peas, and 6 carrots diced.

To prepare first preheat the oven to 450. Boil potatoes until tender; Drain and crush with milk. In a separate saucepan, heat vegetable oil, add ground beef, flour, onion, carrots, thyme, garlic, peas, and tomato paste. Cook beef until browned.

In a casserole, pour beef and carrot filling. Add the potato topping using a spatula to spread over beef. Add grated cheese and bake in an oven for 20 minutes or until topping is browned. Let sit five minutes before serving.
